Pathola Curry-(Snake Gourd)




Snake Gourd contains high amount of nutrients, vitamins (A,B,C) and minerals including significant levels of dietary fiber, high levels of protein, and small number of calories.Snake gourd has been used as a diuretic in conventional medicinal drug for decades, as it stimulates the liver and increases urination,it also will increase the creation of bodily fluids, that can take away dryness and dehydration.





Ingredients

  1. 3 cups snake gourd – cut in to half-moon slices
  2. ½ onion – sliced
  3. 2 cloves garlic – sliced
  4. 1 green/red chili – cut into small pieces
  5. 5 -6 curry leaves
  6. Pandan leaf – small piece
  7. ¼ teaspoon fenugreek
  8. 2 cups coconut milk - little bit thick
  9. ¼ teaspoon turmeric
  10. ¼ teaspoon chili powder
  11. ½ teaspoon Sri Lankan raw curry power
  12. 1 tablespoon Maldive fish – pieces
  13. 1 tablespoon lime juice
  14. Salt to taste 



Method


  • Heat the oil in a pan, then add the onions, mustard seeds, green chillies, pandan leaves and curry leaves.
  • Once the onions turn translucent, add all the spices other than the salt and Maldive Fish. Stir and cook for about a minute.
  • Now add the snake gourd and mix well.
  • Cover and cook for about 3 minutes
  • Now add the Maldive Fish and salt. Cook for another 3 minutes.
  • Add the coconut milk and cook for a further 2 to 3 minutes.
